Apricot and Almond Pots

New season Mediterranean apricots with orange juice topped with low fat fromage frais, toasted almonds and honey.

Ingredients

  • 90ml Freshly squeezed orange juice
  • 100g Virtually fat free fromage frais
  • 20g Whole almonds, halved
  • 22g Clear honey (1 level tbsp)
  • 200g 5 fresh ripe apricots, stoned and quartered
  • 2 cardamom pods, seeds removed and crushed

Method

1. Heat grill to high. In a small saucepan gently simmer the apricots in the orange juice with the crushed cardamom seeds for 3-4 minutes or until softened slightly and warmed through.

2. Divide the apricots and juices between 2 ramekins then spoon on the fromage frais.

3. Meanwhile toast the almonds under the grill for 1-2 minutes until a deep golden brown. Sprinkle over the fromage frais and top with a drizzle of honey. Enjoy immediately.
