Spanish Eggs

Baked egg in a rich spicy tomato sauce.

Ingredients

  • 3g 1 tsp olive oil
  • 75g ½ red onion, peeled and thinly sliced
  • 1 clove of garlic, crushed or finely chopped
  • 75g 1/2 red pepper, de-seeded and thinly sliced
  • 200g Can chopped tomatoes
  • 15g 1 tbsp tomato puree
  • 1/4 tsp (a pinch) of smoked paprika
  • 70g 1 large egg
  • Seasoning to taste

Method

1. Heat the oil in a small non-stick frying pan. Add the onion, garlic and pepper and sauté over a medium heat for 2-3 mins.

2. Add the tomatoes, tomato puree, paprika and seasoning to taste. Cook over a medium heat for 5-10 minutes or until mixture begins to thicken

3. Using the back of a tablespoon make an egg shaped hollow in the tomato mixture and break the egg into the hollow. Cover the pan and cook over a medium heat for 5-6 minutes or until the egg are just set.
