Creamy leek & chestnut pie

Chesnuts are a low fat nut which are great to pad out a dish. This pie uses quark which has a creamy texture but is virtually fat free.

Ingredients

  • 11g 1 tbsp olive oil
  • 650g 3 large leeks, trimmed and washed, and cut into 1cm pieces.
  • 200g Whole ready to eat chestnuts, roughly chopped
  • 30g Chopped parsley
  • 250g Tub quark
  • 100ml Skimmed milk
  • 25g Grana padano cheese, grated
  • 125g Fresh granary breadcrumbs

Method

1. Heat the oil in a large non stick saucepan and add the leeks to the pan.

2. Cover and fry for 5 minutes, stirring occasionally.

3. Add the chestnuts and parsley and cook for 1 minute.

4. Remove from the heat and gently stir in the quark, milk and cheese. Transfer to a heatproof dish and top with breadcrumbs. Place under a preheated grill for 4-5 minutes until golden. Serve with a fresh green salad.
