Creamy leek & chestnut pie
Chesnuts are a low fat nut which are great to pad out a dish. This pie uses quark which has a creamy texture but is virtually fat free.
Ingredients

1 tbsp olive oil

3 large leeks, trimmed and washed, and cut into 1cm pieces.

Whole ready to eat chestnuts, roughly chopped

Chopped parsley

Tub quark

100ml
Skimmed milk

Grana padano cheese, grated

Fresh granary breadcrumbs

Method
1. Heat the oil in a large non stick saucepan and add the leeks to the pan.
2. Cover and fry for 5 minutes, stirring occasionally.
3. Add the chestnuts and parsley and cook for 1 minute.
4. Remove from the heat and gently stir in the quark, milk and cheese. Transfer to a heatproof dish and top with breadcrumbs. Place under a preheated grill for 4-5 minutes until golden. Serve with a fresh green salad.
