Roast Beef, Beetroot and horseradish sandwich

Wholemeal bread sandwiched with slices of roast beef, cucumber and beetroot, rocket leaves and horseradish sauce.

Ingredients

  • 72g 2 slices of wholemeal batch bread
  • 10g 2 level tsp olive (60% fat) spread
  • 20g 2 tsp hot horseradish sauce
  • 20g Rocket leaves
  • 30g 2-3 cm cucumber
  • 70g 2 thin slices cooked rare roast beef
  • 40g 1 small cooked beetroot, thinly sliced

Method

1. Spread both slices of bread with the spread.
2. Spread the horseradish sauce over one slice of bread.
3. Layer the rocket leaves, cucumber, beef and beetroot onto the bread and top with the horseradish slice.

For each serving accompany with additional salad leaves, celery or cucumber.
