Warm Salmon Nicoise Salad on new Potatoes
Salmon set on new potatoes, lettuce, green beans, tomato, red onion and black olives with a citrus herb dressing.
Ingredients

4 pieces of salmon fillet

Baby new potatoes, thickly sliced

French beans, trimmed

1 whole romaine/ cos lettuce, leaves washed and torn

1 small red onion, halved and finely sliced

2 large tomatoes cut into chunks

Freshly chopped basil

Freshly chopped parsley

8 black olives, pitted and halved

Method
For the dressing:
- Juice of 1 lemon
- 1 tsp olive oil
- 5ml Dijon mustard
- 1 garlic clove, crushed
- 5ml freshly chopped chives
1. Cut each salmon fillet into two fingers. Combine the dressing ingredients in a screw top jar and shake well. Chill until required.
2. Cook the potatoes and beans in boiling water for 7-8 minutes or until just al dente. Refresh under cold running water. Drain thoroughly.
3. Meanwhile cook the salmon fillet under a preheated medium set grill for 5-6 minutes, turning once or twice until done. Set aside.
4. In a large bowl toss together the beans, potatoes, lettuce, onion, tomato and fresh herbs with half the dressing. Season with black pepper. Divide and pile onto four large plates or bowls.
5. Arrange the salmon on top and garnish each with 4 olive halves then drizzle on the remaining dressing. Serve.
